Beef Stroganoff is sliced meat, sautéed and stewed with sour cream and broth. This is a classic beef stroganoff recipe with mushrooms champignons and sour cream, but you can make pork or chicken stroganoff .
Finely chop the parsley and garlic. Chop onions lengthwise. Peel the mushrooms and cut into thin slices.
Lightly tenderize the meat and cut into strips against the grain. Cook onion and garlic in olive oil on a medium heat, stirring occasionally, until completely softened, around 10-15 min. Add salt. Adding a little splash of water if it starts to stick.
Remove the onions and fry the mushrooms with butter for around 5 minutes until completely softened. Add salt and pepper.
Put the plain flour into a bowl, salt and pepper, then toss sliced fillet steak in the seasoned flour. Fry steak pieces for 3-4 min, until well colored. Tip the onions and mushrooms and meat into the pan. Whisk sour cream, mustard and beef stock. Cook 5 min on a medium heat. Add salt and add some chopped parsley. Serve with pappardelle or rice.
