Mozzarella Stuffed Chicken Breast

This easy stuffed chicken breast with mozzarella, tomatoes and olives is going to be a new family favorite low carb recipe of the Mediterranean diet! The mozzarella cheese, mixed with black olives, tomatoes and basil add a ton of flavor to the stuffed chicken and the whole recipe is super quick to prepare.

MOZZARELLA STUFFED CHICKEN BREAST

Ingredients (2 servings)

  • 600 g Chicken Breast
  • 1 Mozzarella (125 g)
  • 125 g Tomatoes
  • 20 g Pitted Black Olives
  • 6 Basil Leaves
  • Olive Oil
  • Salt
  • Black Pepper

Instructions

Cut tomatoes into 4 parts. Remove the seeds, cut the pulp into cubes. Slice the olives in rings, cut the mozzarella into cubes. Chop the basil.

Put tomatoes, olives, mozzarella, and basil in a boil. Salt, pour olive oil, and mix all.

Divide the chicken breast into two parts. Cut the chicken breast, making a pocket for the mince. Salt and pepper the pocket. Fill the pocket with mozzarella and tomatoes mix, then close the pocket.

Roll in the flour, dip into the beaten eggs. Roll in breadcrumbs.

Fry the chicken breast into a large amount of vegetable oil. Turn over and fry on the other side. Put on a paper towel.
