PASTA CARBONARA RECIPE
Ingredients ( for 2 servings )
- 180g Spaghetti
- 100 g Pancetta or Bacon
- 50 g Pecorino Romano or Parmesan
- 3 egg yolks
- Black pepper
- Cut the bacon into strips. Separate the yolks from whites. Beat the yolks with a fork, add grated pecorino, mix well.
- Put spaghetti in the boiling salted water. Bacon and pecorino have a salty taste, so do not put too much salt in the water for the pasta. Carefully bend the spaghetti and lower it into the water entirely. Cooking time is indicated on the pack.Fry the bacon in a pan with 1 tbsp. vegetable oil. Shake the pan to roast the bacon evenly. Drain the spaghetti, add to the pan. Save some water from cooking pasta. Remove pan from heat. Pepper the pasta, mix well. Add yolks with cheese and some water from cooking spaghetti. Mix well, pasta should not be dry.
- Take a portion of spaghetti with a fork or chopsticks, twist to get a “cocoon”. Carefully lay out the spaghetti on a plate, decorate with pieces of bacon and grated cheese.
