Spaghetti carbonara is a rapid and straightforward recipe for Italian cuisine. Italians call such dishes “Explain longer than cook.” Real carbonara is made with four ingredients: spaghetti, bacon, yolks, and parmesan.
You do not need to add cream or butter – properly cooked pasta will turn out juicy.
There is a similar recipe with bacon – spaghetti Amatriciana, it is made with tomatoes.


PASTA CARBONARA RECIPE

Ingredients ( for 2 servings )

  • 180g Spaghetti
  • 100 g Pancetta or Bacon
  • 50 g Pecorino Romano or Parmesan
  • 3 Egg Yolks
  • Salt
  • Black Pepper

Instructions

Cut the bacon into strips. Beat the egg yolks with a fork, add grated pecorino, mix well.

Put spaghetti in the boiling salted water. Bacon and pecorino have a salty taste, so do not put too much salt in the water for the pasta. Carefully bend the spaghetti and lower it into the water entirely. Cooking time is indicated on the pack.

Fry the bacon in a pan with 1 tbsp of vegetable oil. Shake the pan to roast the bacon evenly. Drain the spaghetti, add to the pan. Save some water from boiling pasta. Remove the pan from heat. Add pepper to the pasta, mix well. Add yolks with cheese, and some water from cooking spaghetti. Mix well; the pasta should not be dry.

Take a portion of spaghetti with a fork or chopsticks, twist to get a “cocoon.” Carefully lay out the spaghetti on a plate, decorate with pieces of bacon and grated cheese.
