Ingredients (2 servings)

  • 2 Eggs
  • 250-300 g Asparagus
  • 1/4 cup Vegetable Broth
  • Olive oil
  • Salt
  • Pepper
  • 50 ml of whipping Cream
  • 100 g frozen Spinach
  • 1 Lemon (zest)


  1. Heat 50 ml of cream in a small saucepan. Add spinach, cook for 4-5 minutes over medium heat. Add zest of half of lemon. Beat with a blender, salt. Leave to cool.
  2. Put a piece of cling wrap in the bowl. Smash the egg in the bowl, salt and pepper. Tie the film, leaving a little space above the egg. Fasten the egg in the bag on the handle of the spoon. Boil the water. Dip the sachets with eggs in boiling water. Cook for 5 minutes.
