Oven-baked chicken parmigiana –is a breaded chicken breast baked with tomato sauce and mozzarella cheese. A delicious and easy chicken parm recipe has Italian origins, and become very popular in the USA.


Chicken Parmesan

Ingredients

  • 800 g of Chicken Breast
  • 3 Eggs
  • 100 g of Grated Parmesan
  • 250 g of Ground Crackers
  • 550 g of Canned Tomatoes
  • 2 pieces of Mozzarella (125 g each)
  • 100 g of Flour
  • 3 Basil sprigs
  • 1 Onion
  • 2 Garlic cloves
  • Salt
  • Black pepper

Instructions

Breaded chicken breast

Slice each half of the breast into three pieces. Roll in flour.
Beat eggs in a bowl, salt, and pepper. Dip fillet in beaten eggs.
Mix breadcrumbs with parmesan. Roll the fillet in this mixture.

Prepare all the fillets.
Chicken fillets can be stored in the refrigerator for one day, shifted with baking paper.

Heat the oil for frying in a deep skillet over medium heat. Add fillets, fry until golden brown. Put on paper towel. Cut the chicken cutlets into strips.

The sauce

Crush the garlic clove with a knife blade without peeling. Finely chop the onion.
Heat 3 tablespoons of olive oil over medium heat. Fry the garlic until golden brown. Remove the garlic, fry the onion until golden brown.

Add tomatoes and basil, add salt and pepper, stew for 15 minutes over low heat.

Slice the mozzarella. Put the sliced chicken fillet in a single layer into the form (approx. 28х19х6 см) . Pour the tomato sauce, put the mozzarella slices on top.
Repeat until the form is full. Top with mozzarella slices.
Bake the chicken parmigiana for 20 minutes at 180C.
