Chocolate olive oil pear cake with black chocolate and walnuts. A really summer dessert – it is served with vanilla ice cream! This pear cake recipe is made without cocoa, with real dark chocolate – it is very fluffy, voluminous – an ideal cake for breakfast.

CHOCOLATE & PEAR CAKE

Ingredients (8 servings)

  • 2 Pears (sweet varieties)
  • 50g Walnuts
  • 175 g Flour
  • 1 Bag of Baking Powder
  • 1 Lemon
  • 100 g Dark Chocolate
  • 125 ml Milk
  • 100 ml Olive Oil
  • 2 Eggs
  • 120 g Sugar
  • 1 tsp Vanilla Extract
  • Salt

Instructions

Heat the oven to 160 C.

Cut the half of walnuts with a knife is not too shallow. Grind the second half of the nuts in a blender.
Grate the lemon zest.

Sift the flour, then sift it the second time with baking powder (add the baking powder according to the instructions on the package) and a pinch of salt.

Break eggs into a large bowl, add sugar and beat with a mixer until the dough turns white and increase in volume. Add 1 tsp of vanilla extract to the dough. Pour in milk and olive oil, mix well.

Add sifted flour, ground nuts and lemon zest. Stir with a mixer.

Melt the chocolate in a water bath (boiling water should not touch the bottom of the bowl) or in the microwave (500 W for 1-1.5 minutes). Pour the chocolate into the dough, stir.

Put a piece of baking paper at the bottom of a detachable mold with a diameter of 18 cm. Pour the dough into the form, flatten the dough with a spatula.

Wash pears, remove the core, cut into slices *. Put the pear slices on the dough in a circle **. Sprinkle with coarsely chopped nuts.
*Slice the pears immediately before use. If you need to cut pears in advance – sprinkle them with lemon juice.
** In this recipe, pear slices were deliberately not smeared with anything. If you want to keep the light color of the pears – brush the slices with a thin layer of honey, jam or just sugar syrup.

Bake for 60-70 minutes at 160С *.
* Baking time is always approximate, and depends on the model of your oven (in our case it is a ventilated electric oven).

Turn off the oven, leave the cake in the oven for 10 minutes with the door ajar.

Pass the knife along the borders of the form and remove the form. Transfer the cake to the wire rack and leave to cool completely. Sprinkle with icing sugar. Serve with vanilla ice cream.
