CHEESE CRACKERS – SNACK FOR WINE

Ingredients (~ 20 pieces)

  • 175 g Flour
  • 100 g Grated Parmesan
  • 1/4 Ground Black Pepper
  • 100 g Butter
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • 2-3 sprigs of rosemary, dill, thyme, parsley, sage

INSTRUCTIONS

Cut the butter into cubes, leave it on the table so that it gets a little warmer.

Collect 4-5 leaves of sage, chop finely. Collect thyme leaves from 1-2 branches. Collect leaves of parsley and dill, chop finely. Collect a few leaves of rosemary, chop finely.

Mix flour with parmesan in a large bowl, add pepper and salt.

Add 2-3 tablespoons of chopped herbs, mix well with a fork.

Add butter, quickly grind butter with flour mixture, making the crumbs. Add a tablespoon of olive oil and 1 tablespoon of water. Knead the dough quickly and roll it into a ball. Then flatten into a disk, wrap in cling film, put in the refrigerator for at least 1 hour.

Put the dough on a table sprinkled with flour, beat off with a rolling pin. Then roll to a thickness of about 5-7 mm. Cut cookies with a cookie form. Put some leaves in the centre of each cookie, gently press into the dough with a rolling pin. Transfer cookies to a baking sheet covered with baking paper.

Bake for 10-15 minutes at 200 С, until the cookies begin to acquire a golden colour around the edges. Leave to cool completely – cookies will harden only when completely cooled.

Store in a hermetic container.
