CALABRIAN WALNUT CAKE

Ingredients (6-8 servings) form 22-24 cm

  • 250 g Walnuts
  • 4 medium Eggs
  • 150 g Sugar or Icing sugar

INSTRUCTIONS

Grind the nuts into crumbs in a blender or knife.

Put a sheet of baking paper to the bottom of the mold with a diameter of 22-24 cm. Grease the side with butter and sprinkle with nuts.

Take room temperature eggs, separate the yolks from the whites. Beat the whites with a pinch of salt, add 2 tablespoons of sugar. Beat in a dense foam until stable peaks.

Put the yolks in a large bowl, add half the sugar, beat until the mass turns white, and increases in volume, gradually adding the remaining sugar. Beat until sugar is completely dissolved.

Add grounded nuts to beaten egg yolks. Stir well.

Add whipped whites in three steps to the dough, stirring with a spatula from the bottom up.

Pour the dough into the form, flatten. Bake the cake for about 35-40 minutes at 180C. Leave the cake to cool completely, remove from the mold.
