STUFFED ARTICHOKES

Ingredients

  • 5 pcs Artichokes
  • 1 Lemon
  • 40 g Pecorino grated cheese ( or parmesan)
  • 50 g Breadcrumbs
  • Bunch of parsley
  • 1 Garlic Clove (optional)
  • Olive oil
  • Salt
  • Black Pepper

INSTRUCTIONS

Pour very cold water into a bowl; squeeze the juice of one lemon into the water.

Remove the leaves of the artichokes. Remove external petals up to the petals in which the light strip at the base is about 1 cm. Cut off the top of the flower by about 1.5-2 cm.

Peel the flower stalk with a knife. Immediately dip the artichoke in the lemon water, otherwise, it will darken.

Peel all the artichokes and put them into the lemon water. Cover the surface of the water with a paper towel.

Finely chop the parsley. You should get about 3 tablespoons of chopped parsley.

Mix grated cheese, breadcrumbs, and parsley in a bowl. Grate a garlic clove (optional). Add olive oil, salt, and pepper, mix.

Boil artichokes in salted water for 3-4 minutes. Remove from water, cut in half. Remove the core of the artichoke with a sharp knife.

Grease the bottom of the fireproof form with olive oil. Put the artichokes with the cut side up, sprinkle the artichokes with olive oil. Fill the center of each artichoke with a mixture of breadcrumbs with cheese. Bake for 15-20 minutes at 180С (time is indicated for an electric ventilated oven)
