Deep-fried artichokes are a typical dish of the Roman Jewish Ghetto. This recipe for artichokes is called: Jewish artichokes (Carciofi alla giudia). The taste of fried artichokes is very unusual, more like chips. Most often artichokes are served as a hot appetizer, but you can serve them as a side dish for stewed or baked fish.


Artichokes Alla GiudIa

Ingredients

  • Fresh artichokes
  • Frying oil
  • Fleur-de-sel or sea salt

INSTRUCTIONS

Remove the leaves, remove the hard outer petals. Cut the stem about 2 cm above the line of the petals. Peel the stem with a sharp knife. Begin to open the flower, starting from the outer petals, gradually moving towards the center of the flower. Open the flower completely.
Do not try to open the flower immediately – the artichoke has a very tight bud. Start with the outer petals, open the petals a bit, and then repeat the process a few times. Each time the flower will open a little more.

Turn over the opened flower, and gently press it to the table, opening the petals. Do not wash the artichokes!

Pour frying oil into a small deep pan.
Heat frying oil to 180°C over medium heat.
If you do not have the thermometer, take a pinch of flour and throw it into the oil – if the flour foams, then the oil has reached the required temperature. If the oil temperature is too high, the flour begins to darken and smoke; when the oil temperature is too low, the flour gets wet and drowns.

Dip the open artichoke flower into the oil and press it with forceps or a fork to the bottom of the pan.
Fry the flower until golden color.
Remove the finished artichoke on a paper towel, immediately sprinkle it with fleur-de-sel.
