Spaghetti with Olive Oil and Garlic

Famous Italian pasta “Aglio olio e peperoncino”. For this recipe you need simple ingredients: spaghetti, olive oil, one garlic clove, and some dried hot pepper – that’s it! This is one of the basic recipes of the Mediterranean diet, and a masterpiece of simple and at the same time ingenious Italian cooking.


SPAGHETTI WITH GARLIC, PEPPER AND OLIVE OIL

Ingredients (2 servings)

  • 180 g Spaghetti
  • One Garlic Clove
  • 1-2 Dried Hot Peppers
  • Olive Oil

FOR PLATING (optional)

  • One Fresh Hot Pepper
  • A few Leaves of Fresh Basil

INSTRUCTIONS

Boil water in a large saucepan, add salt. Put the spaghetti into the boiling water. Cook the pasta strictly according to the time indicated on the package.

Crush the garlic clove without peeling with a knife blade.

Italians call this cooking method “Aglio in camicia” – garlic in a shirt. If you like the more pronounced taste of garlic, peel the clove and chop it finely.

Heat 3-4 tablespoons of olive oil in a wide frying pan about 5 minutes before the end of cooking the pasta. Add the garlic clove and dried hot peppers. Fry the garlic clove until golden brown over medium heat. Remove the garlic and peppers from the pan.

Pour the spaghetti into a colander, saving some water from cooking pasta. Add the pasta to the frying pan, add some water from the pasta (about 1 ladle). Salt a little, mix the pasta.

Put spaghetti on a plate, garnish with chopped fresh hot pepper and basil leaves.
