Asparagus Pasta

All asparagus recipes have a common line – asparagus must be cooked quickly to preserve all its beneficial properties. You can stew asparagus in a pan, bake in pies and even cook pizza with asparagus and gorgonzola cheese. I offer you an Italian recipe for pasta with asparagus – very light and dietary. According to the same scheme, you can prepare creamy pasta with and asparagus, adding 50 ml of whipping cream at the end of stewing. Choose short pasta for the recipe, like Penne Rigate, Penne Liscie, or Tortiglioni.


ASPARAGUS PASTA RECIPE

Ingredients (2 servings)

  • 160 g Short Pasta (Penne rigate)
  • 350 g Fresh Asparagus
  • 1 Shallot Onion
  • ~ 10 g Grated Parmesan
  • 1-2 Sprigs of Fresh Thyme
  • Olive Oil
  • Salt
  • Black Pepper

INSTRUCTIONS

Peel the asparagus stalks with a peeler. Remove the lower part of the stems (approximately 1.2-2 cm). Cut the white part of the stems into slices, cut the green part of the stem in half lengthwise. Finely chop the shallots.

Boil salted water to cook the pasta. Put the pasta in boiling water

Heat 3-4 tablespoons of olive oil in a pan over medium heat, add chopped onions. Lightly fry the onion and add 1-2 teaspoons of water from the pasta. Stew the onion until transparent and add asparagus. Stir, add water from cooking pasta – asparagus should be stewed, not fried.

Salt and pepper the asparagus, sprinkle with thyme leaves. Simmer for 7-10 minutes on low heat, adding water from cooking pasta, if necessary.

Drain the pasta, add to the pan with asparagus, mix. Sprinkle with grated Parmesan cheese, mix again.

Stew the onion until transparent, and add asparagus, stir, add water from cooking pasta. Salt and pepper the asparagus, sprinkle with thyme leaves. Simmer for 7-10 minutes, adding water from cooking pasta, if necessary. Drain the pasta, add to the pan with asparagus, mix. Sprinkle with grated Parmesan cheese, mix again.
