Garlic Shrimp Flambe' in Tomato Sauce

FRIED SHRIMPS WITH GARLIC AND TOMATOES

Ingredients (2 servings)

  • 10 pcs Shrimp (~ 300 g)
  • 200 g Tomatoes
  • 1 Garlic Clove
  • 1 Small Fresh Hot Pepper (or 2 small dried)
  • 100 ml of Water
  • 25 ml of Brandy
  • Olive Oil
  • A Bunch of Parsley
  • Lemon Zest
  • Salt
  • Black Pepper

INSTRUCTIONS

Defrost shrimp, rinse with cold water. Remove the shrimp shell, leaving the head and tail scales. Remove the insides through a small incision in the back.

Cut the tomatoes into quarters. Coarsely chop the hot pepper, remove the seeds. Peel the garlic clove, cut in half lengthwise.

Heat 2-3 tablespoons of olive oil in a pan, add the half garlic clove, and half chopped hot pepper. Fry the garlic until golden, add chopped tomatoes, salt, add 100 ml of water. Simmer for 5-7 minutes on low heat until the tomatoes are soft.

In a wide frying pan, heat 3-4 tablespoons of olive oil, add the second half of garlic, and the remaining hot pepper. Fry the garlic until golden brown over medium heat, add shrimp to the pan, add salt, and pepper. Fry the shrimp for 1 minute on each side. Pour brandy on the shrimp and set it on fire with a lighter.

Wait until the flame goes out, add the tomatoes to the shrimp. Grate the zest of half a lemon in shrimp, mix gently. Simmer for 2-3 minutes over low heat, sprinkle shrimp with chopped parsley.
