Put chopped hot pepper, garlic, and parsley in a glass or ceramic bowl. Pour olive oil, add salt, mix and let it brew for 15-20 minutes.

Heat the oil for frying to 180 degrees in a deep pan. You can check the temperature with a pinch of flour: if the flour foams, it means that the oil temperature is ideal for frying.
